These Peach Cobbler Muffins are the perfect sweet & easy snack to celebrate warm weather!
1 1/4 cup all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup white sugar
2 cups chopped fresh or canned peaches
1/2 cup whole milk
1/4 cup vegetable oil
For Streusel Topping:
1/4 cup all purpose flour
1/4 cup white sugar
1 pinch cinnamon
3 tablespoons cold unsalted butter
Preheat oven to 350 degrees and prepare a large muffin tin with 8 muffin cups.
Add the flour, baking powder, salt and sugar to a large bowl and whisk together to combine.
Add the peaches, reserving about 3/4 cup for topping the muffins, and stir to coat.
Add the milk, egg and oil and stir together with a rubber spatula just until blended.
Portion batter out into the muffin cups evenly.
Combine streusel, all ingredients except butter, then add butter in cold chunks and break it up wit your fingers in the flour mixture until it resembles course crumbs.
Put remaining peaches on muffins and top with streusel mix.
Bake at 350 for about 20 minutes.
